He hand-rolled his all-natural secret dough, rich in fresh farm butter, into jumbo-sized croissants, then flash-freezes them, unbaked. Ships frozen via 2-day Air Express in a Styrofoam cooler and dry ice on Mondays, Tuesdays and Wednesdays.
